Homemade eclairs! With vanilla pastry cream / chocolate cream

How to make delicious eclairs? It is very easy! And very fast! Homemade eclairs will impress guests, also it is a good snack idea for the party. Also as a homemade dish, it is a cheap wedding food idea.  No need for any special tools or exclusive ingredients!

Easy step by step recipe:

First better make the Vanilla pastry cream / chocolate cream for eclairs filling.

And now making cream:
  • Beat eggs in a bowl. Add sugar and vanilla sugar.
  • Whisk it together. Better use electric mixer.
  • Add flour.
  • And again whisk it by electric mixer.
  • Add to the mixture approximately 1/4 volume of milk
  • Again whisk it by electric mixer. So the mixture will be quite liquid.
  • Pour the remaining 3/4 volume of milk into the saucepan.
  • Bring milk to a boil on the stove.
  • Reduce the power of the stove to almost a minimum.
  • Pour the mixture into the very-slowly boiling milk.
  • Pour the remaining 3/4 volume of milk into the saucepan.
  • Bring milk to a boil on the stove.
  • Reduce the power of the stove to almost a minimum.
  • Pour the mixture to the very-slowly boiling milk.
  • Need keep stirring constantly until the mixture is thick and pudding-like in consistency

Vanilla pastry cream is ready!

And now if need makes the Chocolate cream. (Chocolate prepared for this)

  • 1/3 Volume of Vanilla pastry cream while it hot transfer to another bowl.
  • Add the chocolate.

Chocolate melts easily in hot Vanilla pastry cream.

  • Just need to stir it well

Chocolate cream is ready!

Place Pastry cream and Chocolate cream in the refrigerator.

 

Now we are going to make Choux Pastry

**( Here is an example of one and a half servings )
  • Preheat oven to 300 degrees F (150°C)
  • Pour water into the saucepan. Add salt, sugar, and butter.
  • Bring to a boil.
  • Prepare flour in a separate bowl
  • Bring to a boil on the stove.
  • Pour the flour into the boiling mixture and stir it with a wooden spoon. And the same time remove the saucepan from the stove.
  • Keep stirring quickly until the mixture is smooth in consistency.
  • Add 3** eggs and stir thoroughly
  • Again add 3** eggs and stir thoroughly
  • Keep stirring until the Choux Pastry is smooth in consistency.

Now Choux Pastry is ready.

  • Pipe eclairs over a baking sheet lined with baking paper (or silicone baking sheet). Or place rounded pieces as on photo. So maybe in my case, it will be more looks like a profiteroles / cream puffs. Anyway, choose shape of the eclairs as you like.

    Tips:  if use baking paper, place the aluminum foil between the baking sheet and baking paper. To keep the baking sheet free from butter spots. And also better little spray with butter upper surface of the baking paper.

  • Place the baking sheet into the oven. And bake at 300˚F (150˚C) for 50-55 minutes.
  • Keep the temperature constant and do not open the oven while the eclairs are baking.
  • When the eclairs are ready, take them out of the oven.

**( In my case for 1.5 servings, it will be two baking sheets of eclairs. And need bake it one-by-one )

Now the eclairs (or they more looks like a profiteroles / cream puffs) are ready for filling with Vanilla pastry cream / chocolate cream.
